My Chewy Brownie Recipe

Ingredients
1 ½ cups light or dark brown sugar, packed
3 eggs, room temperature
¾ cup cocoa powder
1 cup all-purpose flour
1 teaspoon salt
1 cup unsalted butter, melted
1 tablespoon coffee grounds (or 1 tablespoon brewed espresso for smoother texture)
1 tablespoon vanilla extract
1 ½ cups dark chocolate chips (optional but recommended)
Powdered sugar for garnish
The Process:
Preheat oven to 350°F.
Grease or line an 8x8 or 9x9 baking pan with parchment paper.
In a large bowl, whisk together until glossy and smooth:
melted butter
brown sugar
vanilla
Add eggs one at a time, whisking well after each.
Stir in cocoa powder, salt, and coffee grounds.
Fold in flour just until combined — don’t overmix.
Fold in chocolate chips if using.
Pour batter into prepared pan.
Bake:
8x8 pan: ~32–38 minutes
9x9 pan: ~28–34 minutes
You want the center slightly soft for fudgy brownies. A toothpick should come out with moist crumbs, not wet batter.
Cool before slicing. Dust with powdered sugar if desired.
