My Chewy Brownie Recipe

These rich brown sugar brownies are deeply chocolatey, perfectly fudgy, and have that irresistible chewy texture everyone loves. The brown sugar gives them a deeper caramel-like flavor that pairs beautifully with the dark chocolate and hint of coffee. Whether you’re making them for a cozy night in, a gathering with friends, or simply to satisfy a chocolate craving, this recipe delivers bakery-style brownies with minimal effort.

Ingredients

  • 1 ½ cups light or dark brown sugar, packed

  • 3 eggs, room temperature

  • ¾ cup cocoa powder

  • 1 cup all-purpose flour

  • 1 teaspoon salt

  • 1 cup unsalted butter, melted

  • 1 tablespoon coffee grounds (or 1 tablespoon brewed espresso for smoother texture)

  • 1 tablespoon vanilla extract

  • 1 ½ cups dark chocolate chips (optional but recommended)

  • Powdered sugar for garnish

The Process:

  1. Preheat oven to 350°F.

  2. Grease or line an 8x8 or 9x9 baking pan with parchment paper.

  3. In a large bowl, whisk together until glossy and smooth:

    • melted butter

    • brown sugar

    • vanilla

  4. Add eggs one at a time, whisking well after each.

  5. Stir in cocoa powder, salt, and coffee grounds.

  6. Fold in flour just until combined — don’t overmix.

  7. Fold in chocolate chips if using.

  8. Pour batter into prepared pan.

  9. Bake:

    • 8x8 pan: ~32–38 minutes

    • 9x9 pan: ~28–34 minutes

    • You want the center slightly soft for fudgy brownies. A toothpick should come out with moist crumbs, not wet batter.

  10. Cool before slicing. Dust with powdered sugar if desired.
